City Councilor Kim Rafferty shares her recipe for Amish Friendship Bread on Pinterest

When Birmingham City Councilor Kim Rafferty is in a pinch to find a gift she always turns to this delicious bread.  It’s a classic!  Councilor Rafferty says with little effort you can bake up this tasty treat which offers just the right personal touch.

Yields: 16
1 cup Amish Friendship Bread Starter
3 eggs
1 cup oil
½ cup milk
1 cup sugar
½ teaspoon vanilla
2 teaspoons cinnamon
1½ teaspoon baking powder
½ teaspoon salt
½ teaspoon baking soda
2 cups flour
1-2 small boxes instant pudding (any flavor)
1 cup nuts, chopped (optional)
1 cup raisins (optional)

Preheat oven to 325° F (165° C).
In a large mixing bowl, add ingredients
Grease two large loaf pans.
Dust greased pans with  mixture of ½ cup sugar and ½ teaspoon cinnamon.
Pour batter evenly into loaf or cake pans and sprinkle remaining cinnamon-sugar mixture on top.
Bake for one hour


Kitchen Notes

This recipe is very versatile! Use 1 or 2 boxes of pudding (pudding boosts flavor and moisture) and add up to 2 cups of dried fruit, nuts or baking chips of your choice (note: heavier add-ins may sink to the bottom).Looking to make it healthier? Swap out ½ cup of oil with ½ cup of applesauce or 1 egg with ¼ cup mashed banana.
